Slow-Cooked Beef Rib Tacos

Ingredients
- Beef Ribs
- BBQ sauce and rub of your choice
- Soft taco shells
- Crunchy taco shells
- Salad mix
- Spicy Mayo
Method
1. Preheat your pellet smoker to 120°C using Samba Smoking Pellets. Samba pellets have a smoky flavour profile that pairs well with beef.
2. Rub the beef ribs with a generous amount of BBQ sauce to coat them. Then, pat the BBQ rub onto all sides of the ribs to help the rub stick better.
3. Place the seasoned beef ribs directly on the smoker grates and close the lid. Let the ribs smoke for about 3 to 4 hours.
4. Remove the beef ribs from the smoker and tightly wrap them in aluminium foil. This creates a steamy environment that promotes tenderness.
5. Place the foil-wrapped beef ribs back into the smoker and continue cooking for an additional 1 to 2 hours, or until the meat is tender.
6. Once the beef ribs are cooked and tender, remove them from the smoker and let them rest for a few minutes. Then, cut the ribs into smaller, bite-sized pieces.
7. To assemble the tacos, start by laying a soft taco shell on a plate. Squeeze some spicy mayo onto the taco shell.
8. Gently crack a crunchy taco shell in half and place the halves on top of the soft taco shell.
9. Add a small handful of salad mix on top of the taco shells.
10. Place the cut beef rib pieces on top of the salad mix.
11. Serve the slow-cooked beef rib tacos immediately and enjoy!
