Hayley's Smoked Salmon Bruschetta

 

Ingredients

 

Focaccia (or use your favourite store bought bread)

  • 350 mL warm water
  • 2 tsp yeast
  • 1 tsp sugar
  • 2.5 cups flour
  • 1 tsp salt
  • 1 tbsp olive oil

 

Bruschetta

  • 100g smoked salmon
  • 1 punnet cherry tomatoes
  • 1/2 red onion
  • 3 garlic cloves
  • 1 tbsp olive oil
  • Handful of basil
  • Salt

 

Tip: Garlic caviar and micro herbs make a perfect garnish!

Method

To make focaccia:

  1. Mix water, yeast and sugar together and rest for 5 minutes.
  2. Add remaining ingredients.
  3. Mix well. Dough will be sticky.
  4. Place more olive oil into a bowl and place dough in, then rest for 30 minutes.
  5. Complete strech and folds 3 times, 30 minutes apart.
  6. Place dough into a tray with olive oil suitable to place over the fire.
  7. Once dough is rested, use your fingers to stretch the dough, making sure it reaches all corners. Press your fingers into the dough to create crevasses in the dough. Sprinkle with salt.
  8. Cook dough for 20 minutes or until golden brown.

Bruschetta:

  1. Finely dice tomatoes, red onion, basil, garlic, and toss with salt and olive oil in a bowl.
  2. Cut up focaccia into roughly 5cmpieces.
  3. Top foccacia slices with 2 tsps of bruschetta.
  4. Arrange small pieces of smoked salmon on top.
